Based in Bolsover Business Park, Jaquest produces arguably the region’s tastiest wood smoked salmon and pancetta, along with a wide range of other mouth watering delicatessen products.

Jaquest’s stall tempted the taste buds of David Cameron and George Osbourne and both tried a slice of The Beast, a chilli and garlic salami, named after Bolsover MP Dennis Skinner.

The top class smoking skills of John Jaquest, who started the business 25 years ago, have become so sought after, Jamie Oliver recruited his skills on a recent show to help him build a DIY smoker. John has also appeared on Channel 4’s Secret Supper Club.

Jason Williams, 43, from Mosborough, who took over Jaquest last year with partner Rachel Lancaster, says he’s keen to build on John’s skills and experience. “John knows his stuff – he only produces the best – and has certainly set out the challenge for me.”

People come from far and wide to purchase the products, which are traditionally smoked and cured using combinations of fresh British produce, sea salt, raw cane sugar, herbs and spices. Jaquest also uses eight different woods for smoking.

Jaquest also produces the Bolsover Smokie.  Like an Arbroath Smokie, Bolsover Smokie is a smoked haddock, gently infused over smouldering natural beech and oak.   The haddock are hung in pairs and dry rubbed.  The beech gives the colour and the oak gives the flavour.

The company uses local ingredients wherever possible, including pigs from a Bolsover farm.  Some of the hams are hung for up to two years – something you’re unlikely to find in supermarkets.

Jaquest supplies many of the top class hotels and restaurants around the region, including Hassop Hall, the Cavendish and Pie Daniels in Baslow.  It also sells at shows and exhibitions, as well as to locals over its sumptuously-stocked counter.  Jason is keen to produce food to order, and provides deliveries.

Products range from cheese to pate, pastrami to olive oil.  Previously a home smoker himself and passionate about this ancient practice of food preserving and flavouring, Jason also likes to supply products that support home smokers, sold in small portions.
